Banana Flax Seed Bread
Ingredients
- 1/2 cup whole wheat flour
- 1 cup all-purpose flour
- 1/2 cup milled flax seed
- 1 tsp baking soda
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup sugar
- 1/4 cup extra-light olive oil
- 1 whole egg
- 1 egg white
- 1-1/2 cups mashed bananas (about 2 medium)
- 1/2 cup chopped walnuts
Directions:
Preheat oven to 350°. Grease and flour 9×5 loaf pan. Combine wheat flour, all-purpose
flour, baking soda, baking powder, salt and milled flax seed in a large bowl. In
a medium bowl whisk together oil, sugar, whole egg, egg white and bananas. Stir
until combined. Stir in walnuts. Pour batter into loaf pan and bake 50 - 55 minutes,
or until toothpick inserted in center comes out clean. Cool for 10 minutes in the
pan and invert bread onto a wire rack to cool completely. |

Ingredients
- 1 cup Bran cereal
- 2/3 cup fat-free milk
- 1 cup all-purpose flour
- 3/4 cup ground flax seed
- 3/4 cup chopped apple
- 1/2 cup packed brown sugar
- 1/2 cup finely shredded carrot
- 1/4 cup granulated sugar
- 1/4 cup flaked coconut
- 1 Tbsp canola or soybean oil
- 3 tsp baking powder
- 2 tsp ground cinnamon
- 1 tsp vanilla
- 1/2 tsp salt
- 4 egg whites
Directions
Pre-Heat oven to 375ºF. Place a paper baking cup in each of the 12 regular-size
muffins cups. Put cereal in plastic bag and crush cereal and crush with a rolling
pin or meat tenderizer. In large bowl, stir together crushed cereal and milk; let
stand about 5 minutes or until cereal is softened. Stir in remaining ingredients.
Divide batter evenly among muffin cups. Bake 20 minutes or until toothpick inserted
in center comes out clean. Immediately remove from pan. |
